#1 Whole Cranberry Sauce

Make a whole cranberry sauce with a fresh twist by adding orange and grapefruit juice and zest to this Thanksgiving staple. You will need the following ingredients:

  • 1 lb. of whole cranberries
  • 3⁄4 cup of sugar
  • 1⁄2 cup of fresh orange juice
  • 1⁄2 cup of fresh grapefruit juice
  • 1 tbsp. of fresh lemon juice
  • 1⁄2 tsp. of salt
  • A generous pinch of nutmeg
  • Zest of 1 orange
  • Zest of 1/2 a grapefruit
  • Zest of 1 lemon

Combine all the ingredients into a medium pot and bring just to a boil over medium-high heat. Reduce the heat to medium-low and stir. Cook the mixture while covered, without stirring, until the liquid has thickened. This will take about 15 minutes. Transfer the cranberry sauce to a bowl and let it cool. You can serve it at room temperature or chilled.

#2 Mashed Potatoes with Parmesan & Wasabi

Add more flavor to your mashed potatoes with parmesan and wasabi. Be sure you have the following ingredients:

  • 2 pounds of russet potatoes
  • 1/4 cup of milk
  • 2 tbsp. of unsalted butter
  • 1 cup of freshly grated Parmesan cheese
  • 1 tsp. of wasabi paste
  • 3/4 tsp. of salt

Prepare and cook the potatoes as you normally would for mashed potatoes. Add milk and butter. Mash the cooked potatoes until the desired consistency is achieved. Add the parmesan, wasabi, and salt and mix until all ingredients are combined.

#3 Candied Acorn Squash Rings

A unique alternative to yams are candied acorn squash rings, which will require the following ingredients:

  • 2 acorn squashes (sliced and deseeded)
  • 1 tbsp. of olive oil
  • 1/2 cup of brown sugar
  • 2 tbsp. of whiskey
  • Salt
  • Pepper

Preheat the oven to 400°F. Line a half-sheet pan with parchment paper. Arrange the acorn squash rings in a single layer on the prepped half-sheet pan. Mix the olive oil, brown sugar, and whiskey in a small bowl. Drizzle half the mixture over the squash rings. Bake the rings for 15 minutes and then flip them. Distribute the remaining glaze on the squash and bake the rings for an additional 15 minutes.
